Based on script fragments found in the 0.7 strings (often denoted by the file extension .script and .meta), the story of GTA V was once notably different.
In the final game, the Prologue is the North Yankton heist in 2004. In the 0.7 beta scripts, the game opened differently. There was no snow. Instead, the tutorial mission took place in the Backlot City area of East Los Santos (a parody of the backlots of Universal Studios).
Dialogue logs from 2009 refer to Michael De Santa (then named "Mickey Townley") as a washed-up producer, not a retired bank robber. Trevor Philips was originally called "Trevor McReary" (linking him to the McReary family from GTA IV), and his introduction mission involved him burning down a trailer park because a rival meth cook looked at him wrong—a level of sadism that seems to have been toned down for the final release.

Perhaps the most heartbreaking aspect of the 0.7 beta for long-time fans is the arsenal. GTA V’s final release is criticized by some for being too "arcadey" with its weapon wheel and explosive ammunition. The 0.7 build suggests a much grimmer, GTA IV-esque philosophy was originally intended.
If you are a modder reading this and want to play the 0.7 beta, you are out of luck. Unlike the GTA IV beta (which leaked as a playable .exe), the GTA V 0.7 assets are fragmented.
